Flourless Chocolate Protein Pancakes

Preparation:

  1. In a blender, combine the banana, eggs, and chocolate protein powder. Blend until smooth. Let the batter rest for 2-3 minutes to thicken slightly.
  2. Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with coconut oil or butter (optional)
  3. Pour small amounts of batter onto the pan (about 2 tablespoons per pancake). Cook for 1-2 minutes, until bubbles form on the surface. Flip and cook for another 30-60 seconds.
  4. Serve the pancakes and top with raspberries and a drizzle of maple syrup (optional)
