Green Gazpacho

A big bowl of green gazpacho is the perfect way to get extra greens into your day! Made from green veggies, leafy greens, and herbs, this green gazpacho recipe is a savory alternative to green juices and smoothies. It’s cool, creamy, and filling with the addition of yogurt and avocado. We bumped up the nutrition with a scoop of our SPORT Greens Powder for extra green goodness. Meal prep a batch of green gazpacho for weekly lunches or as an extra serving of greens with dinner.

Ingredients:
- ½ cup water
- 2 Tbsp. olive oil
- Juice of 1 lemon
- 1 cup nonfat Greek yogurt
- 1 medium avocado, pitted and peeled
- 1 tsp. sea salt
- ½ tsp. ground black pepper
- 1 scoop Garden of Life Sport Organic Greens Powder (Original)
- 1 English cucumber, roughly chopped
- 1 green bell pepper, seeds removed
- 2 cups leafy greens, such as baby spinach or kale
- 1 jalapeno, seeds removed
- 1 garlic clove, peeled
- ½ cup fresh green herbs, such as parsley, basil, or cilantro
- 1 Tbsp. pepitas, divided
- For topping: extra chopped cucumber, herbs, olive oil, yogurt, and/or ground black pepper
Preparation:
- Pour water, olive oil, lemon juice, yogurt and avocado into a high-speed blender. Add greens powder, cucumber, bell pepper, leafy greens, jalapeno, garlic, and herbs. Blend until smooth. Taste and adjust the amount of salt and ground black pepper if needed.
- Chill in an airtight container in the refrigerator for at least 1 hour before serving.
- To serve, ladle gazpacho into bowls. Top each bowl with a drizzle of olive oil, a tablespoon of yogurt, extra chopped cucumber, ground black pepper, and/or pepitas, if desired.
