Birthday Cake Bars

This birthday cake bars recipe isn't just for birthdays, but every time you eat one, you'll celebrate the delicious taste packed with the healthy goodness of collagen.

Serves: 16 bars

Ingredients

Use Organic if possible

Dry Ingredients:

Wet Ingredients:

  • 1 stick grassfed butter (½ cup) such as Kerrygold

  • 1 cup monkfruit sugar

  • 1 egg

  • 1 tsp. vanilla extract

  • 3 Tbsp. whipped cream cheese (or regular cream cheese)

Frosting:

Preparation

  1. Line a 8x8 pan with parchment paper and preheat oven to 375 degrees.

  2. Mix together all dry ingredients and set aside.

  3. Using an electric mixer, beat butter and sugar until smooth and fluffy.

  4. Add in egg, whipped cream cheese and vanilla and beat again until smooth. Pour dry ingredients into wet ingredients and beat together until you get a sugar cookie dough- like consistency.

  5. Press batter into pan and bake for 17-19 minutes then let cool.

  6. To make frosting, beat all frosting ingredients together until smooth then spread on cooled bars. Top with sprinkles (optional).
