
Birthday Cake Bars

Makes: 16 bars
Use Organic:
Dry Ingredients:
2¼ cups gluten-free flour
2 scoops Garden of Life Collagen Protein Vanilla
¾ tsp. baking powder
¼ tsp. salt
Wet Ingredients:
1 stick grassfed butter (½ cup) such as Kerrygold
1 cup monkfruit sugar
1 egg
1 tsp. vanilla extract
3 Tbsp. whipped cream cheese (or regular cream cheese)
Frosting:
2 cups Swerve powdered sugar
1 scoop Garden of Life Collagen Protein Vanilla
1 Tbsp. heavy whipping cream or non-dairy milk of your choice
¼ tsp. vanilla
1/8 tsp. salt
Preparation: Line a 8x8 pan with parchment paper and preheat oven to 375 degrees. Mix together all dry ingredients and set aside. Using an electric mixer, beat butter and sugar until smooth and fluffy. Add in egg, whipped cream cheese and vanilla and beat again until smooth. Pour dry ingredients into wet ingredients and beat together until you get a sugar cookie dough- like consistency. Press batter into pan and bake for 17-19 minutes then let cool. To make frosting, beat all frosting ingredients together until smooth then spread on cooled bars. Top with sprinkles (optional).
