Blackberry Coconut Collagen Bars

This blackberry coconut collagen recipe is a snacker's favorite. Craving something chocolate but want something with a little nutritional value too? Done!
Makes: 10 bars
Ingredients
Use Organic if possible

3 cups shredded coconut
-
2 cups fresh blackberries

1/3 cup Garden of life Coconut Oil plus 1 ½ Tbsp.

1 bag dairy-free chocolate chips (such as Lily’s or Enjoy Life)
Preparation

Blend blackberries in a blender or food processor. Strain berries through a mesh strainer to remove seeds.

Place blackberry puree, 1/3 cup of coconut oil, shredded coconut and protein powder into a food processor using the “s” blade and process until well combined. \

Press batter into a 5x8 lined baking pan and freeze for at least one hour.

Once the batter is set, remove from pan and cut into 10 equal bars. Then place the bars back into the freezer.

Melt chocolate and 1½ Tbsp. of coconut oil in a double broiler.

Dip each bar into chocolate, coating evenly, then place bars on parchment-lined cookie sheet and freeze for at least 15 minutes to set.
