No Bake Peanut Butter Protein Cookies

These No Bake Peanut Butter Protein Cookies taste like a soft, sugar-sprinkled peanut butter cookie, but they come together in one bowl and in a fraction of the time. They’re also lower in added sugar and higher in both protein and fiber than a traditional cookie, thanks to the addition of our Vanilla Raw Organic Protein powder. Make a batch of No Bake Peanut Butter Protein Cookies at the start of the week for grab-and-go snacks or whenever you need to satisfy a sweet tooth.

Ingredients

1 cup natural, unsalted peanut butter

¼ cup maple syrup

1 Tbsp. unsweetened almond milk

1 tsp. vanilla extract

½ tsp. sea salt

2 Tbsp. coconut flour
-
2 Tbsp. granulated sugar, optional
Preparation

Line a cookie sheet with parchment paper. Set aside.

In a mixing bowl, stir together peanut butter, maple syrup, almond milk, vanilla extract, and salt.

Add 1 scoop of protein powder and stir until most of the powder is mixed in. Add the second scoop of protein and stir, scraping the sides of the bowl as needed, until combined.

Add the coconut flour and stir or use your hands to combine. If the mixture is crumbly, add an additional teaspoon of almond milk to help it come together.

Place granulated sugar in a small bowl. Roll cookie dough mixture into balls about 1 ½ inches in diameter. Place each ball, one at a time, in the granulated sugar and roll to cover. Transfer the balls onto the cookie sheet. Use the back of a fork to flatten the cookies and make a crisscross pattern across the top.

Store cookies in an airtight container at room temperature or in the refrigerator.
