Oatmeal Jam Breakfast Bars

These Oatmeal Jam Breakfast Bars taste like dessert, but are made with wholesome ingredients you can feel good about eating at breakfast. A homemade berry and chia seed jam is sandwiched between layers of oats combined with almond flour, brown sugar, cinnamon, and walnuts. We also added a couple scoops of our unflavored collagen peptides for extra protein and nutrition. Enjoy Oatmeal Jam Breakfast Bars with a mug of hot coffee or along with eggs and fresh fruit for a filling breakfast.

Ingredients
For the jam layer:
- 1 cups frozen assorted berries
- 1 tablespoon honey
- 1 ½ tablespoons chia seeds
For the oat layer:
- 1 ½ cups rolled oats
- ¾ cup almond flour
- ½ cup lightly packed brown sugar
- ½ teaspoon ground cinnamon
- ½ teaspoon sea salt
- ½ teaspoon baking soda
- 2 scoops Garden of Life Unflavored Collagen Peptides
- ⅓ cup avocado oil
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
- ½ cup chopped raw walnuts
Instructions
- Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper.
- To make the berry jam, place berries in a medium saucepan set over medium heat. Cook until the fruit begins to bubble and the berries are bursting, about 10 minutes. Remove from heat and stir in the honey and chia seeds. Set aside to cool.
- In a large mixing bowl, stir together oats, almond flour, brown sugar, cinnamon, salt, baking soda, and collagen.
- Pour the avocado oil and beaten egg into the dry ingredients. Stir to combine.
- Fold the walnuts into the oat mixture.
- Spread half of the oat mixture into an even layer on the bottom of the baking pan. Top with jam, then spread the remaining half of the oat mixture on top of the jam.
- Bake for 25 to 30 minutes, until the top is golden brown. Let cool completely before slicing into 9 squares. Store bars in an airtight container in the refrigerator.
