Need a quick and easy way to get your protein during your busy day? This Protein-Packed Egg Bites Recipe is just the thing you need in your life! Filled with eggs, cheese, spinach, red bell pepper and Unflavored Garden of Life Raw Organic Protein Powder, these delicioous little bites are perfect to make ahead and have ready to grab-n-go when running out the door or as a yummy breakfast or anytime snack! 

Ingredients 

  • 10 large eggs
  • ½ cup shredded cheese (any variety)
  • 1 scoop Garden of Life Raw Organic Protein, Unflavored
  • ¾ tsp. garlic powder
  • ½ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 1½ cups chopped baby spinach
  • ½ cup diced red bell pepper
  • 1 Tbsp. chopped green onions

Instructions: 

  1. Preheat the oven to 400 degrees F. Grease a 12-cup muffin pan.
  2. Combine the eggs, cheese, protein powder, garlic powder, salt and black pepper in a blender. Blend on high until well beaten, about 30 seconds. 
  3. Place the chopped spinach and bell pepper evenly in the muffin cups. Pour the egg mixture on top, filling each cup about ¾ the way up.
  4. Bake 16-18 minutes, or until cooked through. Transfer to a wire rack to cool for 5 minutes before removing from pan. Serve warm garnished with a sprinkle of green onions.
