Pumpkin Spice Waffles with Apple Butter

Use Organic:
  • Waffles
  • 2 cups gluten-free flour
  • ¼ cup coconut palm sugar
  • 1 Tablespoon pumpkin pie spice
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 3 eggs
  • 1 cup pumpkin puree
  • 1½ cups unsweetened almond milk
  • ½ cup maple syrup
  • 3 Tablespoons Garden of Life Coconut Oil
  • Apple Butter
  • 3 lbs. of apples (such as fuji or gala)
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon sea salt
  • 1 teaspoon lemon juice
  • ¼ cup water
  1. For the waffles - whisk together all dry ingredients (first 6 ingredients) then add in the remaining waffle ingredients and mix with an electric mixer until batter is well combined.
  2. Heat waffle iron to high.
  3. Spray iron with coconut oil spray or you can brush on melted coconut oil.
  4. Spread batter onto waffle iron, close to let cook for about 5-6 minutes.
  1. For the Apple Butter - peel and cut apples into slices and place them into a crockpot (don’t turn it on yet).
  2. Add in the spices, salt and water then cover with lid and cook for 6 hours on low.
  3. Remove lid and using an immersion blender (or you can carefully pour the apples into a blender and blend on low), blend the apples until smooth like applesauce.
