Pumpkin Spice Waffles with Apple Butter

Pumpkin spice is very nice, but these Pumpkin Spice Waffles with Apple Butter are next level. Chef Gwen outdid herself this time!
Serves: 8
Ingredients
Use Organic if possible
Waffles:

2 cups gluten-free flour

¼ cup coconut palm sugar

1 Tbsp pumpkin pie spice
-
2 tsp baking powder
-
½ tsp baking soda
-
¼ tsp sea salt
-
3 eggs
-
1 cup pumpkin puree
-
1½ cups unsweetened almond milk
-
½ cup maple syrup
Apple Butter:
-
3 lbs. of apples (such as Fuji or Gala)

2 tsp ground cinnamon
-
½ tsp ground ginger
-
¼ tsp ground cloves
-
¼ tsp sea salt
-
1 tsp lemon juice
-
¼ cup water
Preparation
For the waffles:
- Whisk together all dry ingredients (first 6 ingredients) then add in the remaining waffle ingredients and mix with an electric mixer until batter is well combined.
- Heat waffle iron to high.
- Spray iron with coconut oil spray or you can brush on melted coconut oil.
- Spread batter onto waffle iron, close to let cook for about 5-6 minutes.
For the Apple Butter:
- Peel and cut apples into slices and place them into a crockpot (don’t turn it on yet).
- Add in the spices, salt and water then cover with lid and cook for 6 hours on low.
- Remove lid and using an immersion blender (or you can carefully pour the apples into a blender and blend on low), blend the apples until smooth like applesauce.
