Pumpkin Spice Waffles with Apple Butter

Pumpkin spice is very nice, but these Pumpkin Spice Waffles with Apple Butter are next level. Chef Gwen outdid herself this time!

Serves: 8

Ingredients

Use Organic if possible

Waffles:

  • 2 cups gluten-free flour

  • ¼ cup coconut palm sugar

  • 1 Tbsp pumpkin pie spice

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp sea salt

  • 3 eggs

  • 1 cup pumpkin puree

  • 1½ cups unsweetened almond milk

  • ½ cup maple syrup

  • 3 Tbsp Garden of Life Raw Extra Virgin Coconut Oil

Apple Butter:

  • 3 lbs. of apples (such as Fuji or Gala)

  • 2 tsp ground cinnamon

  • ½ tsp  ground ginger

  • ¼ tsp ground cloves

  • ¼ tsp sea salt

  • 1 tsp lemon juice

  • ¼ cup water

Preparation

For the waffles: 

  1. Whisk together all dry ingredients (first 6 ingredients) then add in the remaining waffle ingredients and mix with an electric mixer until batter is well combined.
  2. Heat waffle iron to high.
  3. Spray iron with coconut oil spray or you can brush on melted coconut oil.
  4. Spread batter onto waffle iron, close to let cook for about 5-6 minutes.

For the Apple Butter:

  1. Peel and cut apples into slices and place them into a crockpot (don’t turn it on yet).
  2. Add in the spices, salt and water then cover with lid and cook for 6 hours on low.
  3. Remove lid and using an immersion blender (or you can carefully pour the apples into a blender and blend on low), blend the apples until smooth like applesauce.
