This delicious and healthy option for a Roasted Vegetable Salad recipe has a Lemon Garlic Vinaigrette with added Collagen Peptides. Not only do you get the healthy goodness of all these yummy roasted vegetables, but you get a dose of collagen peptides—known for supporting hair, skin, nails, and joints all mixed up in a delicious lemon garlic vinaigrette.

Lemon-Garlic Collagen Vinaigrette:

Vegetable Salad: 

  • 5 cups kale 

  • 1 cup roasted butternut squash 

  • 1 cup roasted Brussels sprouts 

  • 1 cup roasted green beans 

  • 1/3 cup sliced shallots 

  • 1/3 cup pomegranate arils 

  • Toppings (optional): roasted pepitas, flaky sea salt  


Lemon-Garlic Collagen Vinaigrette:

  1. Combine all ingredients in a small jar and shake until well combined. Store in the refrigerator for up to one week. 

Vegetable Salad:

  1. Combine all salad ingredients in a large bowl and toss with the vinaigrette.

  2. Divide into 4 large bowls and garnish with pepitas and a sprinkle of flaky sea salt, as desired.
