Roasted Vegetable Salad with Lemon Garlic Collagen Vinaigrette

This is going to be your new go-to recipe for a side dish or a light lunch or dinner. There are so many ways to add collagen to your diet, but we think this recipe goes outside the box. This delicious and healthy option for a Roasted Vegetable Salad recipe has a Lemon Garlic Vinaigrette with added Collagen Peptides. Ingredients
Lemon-Garlic Collagen Vinaigrette:

2 Tbsp. lemon juice

1 tsp. lemon zest

½ tsp. sea salt

¼ tsp. freshly ground black pepper

1 tsp. Dijon mustard

1/3 cup garlic-infused olive oil
Vegetable Salad:

5 cups kale
-
1 cup roasted butternut squash
-
1 cup roasted Brussels sprouts

1 cup roasted green beans
-
1/3 cup sliced shallots
-
1/3 cup pomegranate arils

Toppings (optional): roasted pepitas, flaky sea salt
Preparation
Lemon-Garlic Collagen Vinaigrette:

Combine all ingredients in a small jar and shake until well combined. Store in the refrigerator for up to one week.
Vegetable Salad:

Combine all salad ingredients in a large bowl and toss with the vinaigrette.

Divide into 4 large bowls and garnish with pepitas and a sprinkle of flaky sea salt, as desired.
