Wake up to a yummy, healthy, breakfast delight with this Sweet Potato Overnight Oats recipe that includes the added goodness of Collagen Protein.

Serves: 2

Ingredients

Use Organic if possible

  • 1 cup quick oats (gluten free)

  • 1 cup almond milk

  • 1 cup chopped pecans

  • 2 scoops Garden of Life Collagen Protein Vanilla

  • 1 cup mashed sweet potatoes

  • 2 Tbsp. maple syrup

  • 1 Tbsp. pumpkin pie spice

  • Blackberries for topping

Preparation

  1. Combine oats with chopped pecans and one scoop of Garden of Life Collagen Protein Vanilla.

  2. Mix the other scoop of collagen protein into the mashed sweet potatoes along with the maple syrup and pumpkin pie spice.

  3. Using an 8-10 oz. jar, fill jar halfway up with the oat mixture then add about ¼ cup almond milk.

  4. For the middle layer, add in the sweet potato mixture and for the top layer, add the oat mixture with another ¼ cup almond milk.

  5. Repeat these steps for the second jar then cover the jars and let them sit overnight in the refrigerator.

  6. In the morning, top each one with blackberries and enjoy!
