Apple Cinnamon Pie Bars

Ingredients:
Crust and Topping:
- ½ cup vegan butter, softened
- ¼ cup Garden of Life Extra Virgin Coconut Oil, melted
- 1/3 cup maple syrup
- 1 tsp. vanilla
- 2 ¾ cups almond flour
- 1 scoop Garden of Life Collagen Turmeric Apple Cinnamon
- ½ tsp. baking soda
- ¼ tsp. salt
Filling:
- 4 cups peeled, diced apple
- 1 Tbsp. lemon juice
- 1 Tbsp. Garden of Life Extra Virgin Coconut Oil
- 1 tsp. cornstarch
- 1 Tbsp. maple syrup
- 2 tsp. cinnamon
- ¼ tsp. nutmeg
Instructions:
- Preheat oven to 350 degrees F. Line an 8” x 8” baking pan with parchment paper.
- In a large bowl, cream together the vegan butter, coconut oil, maple syrup, and vanilla. Add the almond flour, collagen, baking soda and salt and beat until well combined. Divide the dough in half. Press half of the dough into an even layer in the prepared pan. Bake for 12 minutes.
- To make the filling, combine the apples, lemon juice, coconut oil, cornstarch, maple syrup, cinnamon and nutmeg in a saucepan over medium heat. Cook 7 to 8 minutes, or until apples begin to soften. Transfer apples to the baking pan and spread into an even layer on top of crust. Crumble the remaining dough on top of apples. Return to oven and bake 30 minutes more, or until golden brown. Remove from oven and cool slightly before slicing and serving
