

Who doesn’t love tacos? And this recipe for Breakfast Tacos is extra special because it has the added goodness of Collagen.

Ingredients

4 tortilla shells (of your choice)

4 eggs

1 red bell pepper

1 orange bell pepper

Garden of Life Extra Virgin Coconut Oil (or olive Oil)

Shredded cheese (of your choice, can be vegan)

Salt and pepper to taste
Preparation

Start by chopping the red and orange bell pepper (you will probably only use ½ of each, depending on the size of the pepper).

Next, whisk the eggs together with the collagen.

Heat up a skillet to medium high. Add in 1 tsp. of coconut or olive oil. Add in chopped bell peppers and cook until tender, then add in egg mixture and cook (while stirring) until the eggs are scrambled.

Lay down a tortilla shell and sprinkle on about 1 Tbsp or so of cheese in center.

Add in ¼ of the cooked egg mixture then fold in sides of shell, and fold the bottom up to close the taco.

Place taco in toaster (folded side should go into the toaster, not the top) and toast (this will melt the cheese and then keep the taco together).

Repeat with the other 3 shells and enjoy or take one to go!
