Chocolate Protein Bark

To be honest, most holiday sweets don’t offer much, if any, protein or fiber. This Chocolate Protein Bark recipe is an exception, delivering approximately 4 grams of protein and 3 grams of fiber per serving to help satisfy your sweet tooth in a healthier way. And we’ve added Garden of Life Chocolate Raw Organic Protein powder to the melted dark chocolate for added nutrition and extra chocolatey flavor. Ingredients

  • 10-ounces dark chocolate chips 

  • 1 Tbsp. coconut oil 

  • 2 scoops Garden of Life Chocolate Raw Organic Protein Powder 

  • ⅓ cup roasted and salted pistachios 

  • ½ cup dried no sugar added apricots, quartered 

  • ¼ cup dried cranberries 

  • 2 Tbsp. unsweetened flaked coconut 

  • ½ tsp. flaky sea salt 

Preparation

  1. Line a baking sheet with parchment paper. 

  2. Measure and prep the toppings (pistachios, apricots, cranberries, and coconut) for the chocolate bark.  

  3. Place dark chocolate chips in a microwave-safe bowl. Heat chocolate in the microwave for 30 seconds at 40% power, then stir. Repeat heating in 30 seconds increments and stirring in between until the chocolate is shiny and almost completely melted. 

  4. Add coconut oil to chocolate and stir until both the oil and chocolate chips are completely melted. 

  5. Sprinkle protein powder into the melted chocolate half a scoop at a time. Stir until protein dissolves into the chocolate, then add the next half scoop and so on until all the protein has been added. 

  6. Use a spatula to pour the melted chocolate mixture onto the parchment lined baking sheet. Spread into an approximately 9 x 12-inch rectangle. 

  7. Evenly sprinkle the pistachios, apricots, cranberries, and coconut on top of the chocolate. Sprinkle the chocolate bark with flaky sea salt. 

  8. Place baking sheet in the freezer until chocolate is hardened, about 20-30 minutes. Remove from the freezer and use a sharp knife to cut the chocolate bark into 16 pieces. Store chocolate bark in a sealed container in the refrigerator.
