Ingredients

  • 2 ears corn, husks removed

  • 2 tsp. avocado oil 

  • ½ cup plain Greek yogurt

  • 1 Tbsp. milk

  • 2 Tbsp. lemon juice 

  • 2 scoops Garden of Life Grass-Fed Collagen Peptides

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • ¾ tsp. salt

  • ½ tsp. ground black pepper 

  • ¼ cup chopped fresh chives

  • ¼ cup chopped fresh parsley

  • 4 medium avocados

  • ½ cup chopped cherry tomatoes

  • ½ cup finely chopped red onion

  • 1 jalapeno, seeded and diced - optional

  • Cut veggies and/or tortilla chips, for serving

Preparation

  1. Heat a grill to medium-high heat. Rub the avocado oil on the husked corn and place on the grill. Use tongs to turn the corn frequently. Cook until corn kernels are lightly charred all over, about 5 to 10 minutes. Let corn cool while you prepare the remaining ingredients.

  2. In a large mixing bowl, whisk together the Greek yogurt, milk, lemon juice, collagen, garlic powder, onion powder, salt, ground black pepper, chives, and parsley.

  3. Remove the peels and pit from the avocados. Add avocados to yogurt mixture and mash to your desired consistency. 

  4. Use a sharp knife to cut corn kernels away from the cobs. Fold corn, tomatoes, red onion, and jalapeno into the avocado mixture. Taste and adjust seasoning, if needed.

  5. Serve with veggies and tortilla chips for dipping.
