Ingredients

1 large egg white

4 Tbsp. maple syrup

1 tsp. pure vanilla extract

2 tsp. ground cinnamon

¼ tsp. ground nutmeg

½ tsp. sea salt

4 cups raw mixed nuts, such as almonds, cashews, pecans, and/or walnuts
Preparation

Preheat the oven to 325 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.

In a large mixing bowl, whisk together the egg white, maple syrup, vanilla extract, cinnamon, nutmeg, salt, and collagen peptides.

Add nuts to the bowl and stir until nuts are evenly coated with egg mixture.

Spread the nuts on the parchment lined baking sheet in an even layer.

Bake for 10 minutes, then stir the nuts. Bake for an additional 10 minutes until nuts are golden and the egg white mixture hardens. Watch closely during the last few minutes to prevent burning. Remove from the oven and stir the nuts again. Let the nuts cool completely before transferring to a serving bowl. The nuts can be stored in an airtight storage container at room temperature.
