  1. Preheat oven to 350 degrees. Grease a 6-count donut pan and set aside.

  2. In a large bowl, whisk together the collagen, flours, maple sugar, and baking soda. In a separate bowl, whisk together the eggs, vinegar and milk. Combine wet and dry ingredients and mix until just combined.

  3. Transfer batter to a piping bag or ziptop plastic bag with one corner cut. Pipe batter into the greased doughnut pan.

  4. Bake 12-15 minutes, or until toothpick comes out clean. Cool in pan five minutes, then transfer to a wire rack to cool completely.

  5. To make the glaze, combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30 second intervals until fully melted and smooth. Stir well.

  6. Dip the tops of the cooled doughnuts in the chocolate glaze. Return glazed doughnuts to the cool rack to set. Top with sprinkles, as desired.
