1 ¼ cups gluten-free baking flour

3 Granny Smith apples, peeled/chopped

2 scoops Garden of Life Collagen Peptides

1 tsp. baking powder

1 tsp. baking soda

½ tsp. cinnamon

½ tsp. salt

6 Tbsp. grassfed butter

½ cup coconut palm sugar

½ cup sugar or Monkfruit sugar

2 eggs
-
1 tsp. vanilla
Caramel
-
¼ cup heavy whipping cream
-
2 Tbsp. grassfed butter
-
½ cup coconut palm sugar
Preparation
- Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper.
- Whisk together flour, collagen peptides, baking soda, baking powder, cinnamon and salt.
- Melt the 6 tablespoons of butter then pour into a separate bowl and add in sugars, eggs, and vanilla and mix well. Add wet ingredients to dry ingredients, mix well, then fold in apples.
- Bake for 30-35 minutes then let cool.
- To make caramel sauce: melt the 2 tablespoons of butter on medium low, stirring frequently until the butter begins to brown and smell nutty. Add in heavy whipping cream and coconut palm sugar, keep stirring until the sauce begins to thicken and turn into caramel.
- Pour caramel sauce over cake and serve warm.
