Serves: 8

Ingredients

  • 5 eggs

  • 1 scoop Garden of Life Collagen Peptides

  • 1 ½ cups sliced mushrooms

  • 1 cup diced yellow onion

  • 4 cups spinach leaves

  • 2 Tbsp. olive oil

  • ½ tsp. salt

  • 2 cups shredded cheese (of choice)

Preparation

  1. Preheat oven to 350 degrees.

  2. Heat a pan to medium high with olive oil. Add in mushrooms, onions, and salt, and sauté for 5 minutes. Add in spinach and cook another 2 minutes. Remove from heat. Whisk together the eggs. Add in collagen peptides and whisk again. Now add in cheese, and mix. Pour veggie mixture into egg mixture and mix together.

  3. Pour into a greased 9-inch pie pan and bake for 40 minutes.

  4. Let cool for at least 10 minutes before cutting and serving.
