Ingredients
For Falafel
- 1 (15 ounce) can chickpeas, rinsed and drained
- 4 garlic cloves
- ¾ cup fresh cilantro or parsley
- ¼ cup red/yellow onion, chopped
- 1 tsp. baking powder
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- ½ tsp. paprika
- ½ tsp. salt
- ¼ tsp. ground pepper
- 2 Tbsp. lemon juice
- Cooking spray
For Collagen Tahini Dressing
- ¼ cup tahini
- 2 Tbsp. lemon juice
- 2 Tbsp. warm water
- 1 scoop Garden of Life Collagen Peptides
- ½ tsp. garlic powder
For Wrap
- 4 gluten-free tortillas
- 2 cups lettuce, chopped
- 1 cup tomatoes, sliced
- 1 cup red onions, sliced
- 1 cup cucumber, sliced
Directions
- Preheat the oven to 400°F. Line a baking tray with parchment paper and set it aside.
- In a food processor, add the ingredients listed under “for falafel” (except cooking spray). Pulse to mash into a thick paste.
- Using an ice cream scoop, form the mixture into uniform round balls and place them on the prepared parchment paper. Spray the falafel balls with cooking oil on top.
- Bake the falafel in the preheated oven for 20-25 minutes until perfectly cooked and golden, turning them halfway through. Remove the falafel from the oven and set them aside to cool.
- Meanwhile, prepare the collagen tahini dressing. In a bowl, add the ingredients listed under “for collagen tahini dressing” and mix until smooth. Set it aside.
- To assemble the wrap, place a tortilla on a board. Add lettuce, tomato slices, cucumber slices, and 2-3 baked falafel. Drizzle the prepared dressing over the top. Fold and serve the wrap immediately to enjoy.
