Healthy Ice Cream Sandwiches

Here’s a refreshing, healthy treat for warm summer days. This Healthy Ice Cream Sandwich recipe is special since it includes a nutritious boost by including Sport Plant-Based Protein!

Ingredients

Use Organic if possible

Bottom Layer:

Middle Layer:

Top Layer:

Preparation

  1. For the bottom layer, place all ingredients into a food processor using the “s” blade and process until crumbly, then press into a rectangular baking pan.

  2. For the middle layer, place all ingredients into a high-speed blender and blend until smooth. Then pour over the bottom layer and freeze for about an hour (to set).

  3. For the top layer, place all ingredients into a high-speed blender and blend until smooth then pour over middle layer and freeze again for at least 3 hours.

  4. Once everything has set, cut into squares and serve cold.

  5. Store in freezer for up to one month.
