Healthy Ice Cream Sandwiches

Here’s a refreshing, healthy treat for warm summer days. This Healthy Ice Cream Sandwich recipe is special since it includes a nutritious boost by including Sport Plant-Based Protein!
Serves: 9
Ingredients
Use Organic if possible
Bottom Layer:

2 cups walnuts
-
½ cup cacao
-
12 dates
-
2 Tbsp. Garden of Life Extra Virgin Coconut Oil (at room temperature)

½ tsp. salt
Middle Layer:
-
2 cups cashews (soaked in water for 30 minutes then rinsed and drained)

2 cup unsweetened almond milk
-
½ cup Garden of Life Extra Virgin Coconut Oil (at room temperature)
-
¼ cup maple syrup
Top Layer:
-
1 ½ cup cashew butter
-
¾ cup cacao
-
¾ cup maple syrup
-
¾ c. Garden of Life Coconut Oil (at room temperature)

½ tsp. salt
Preparation

For the bottom layer, place all ingredients into a food processor using the “s” blade and process until crumbly, then press into a rectangular baking pan.

For the middle layer, place all ingredients into a high-speed blender and blend until smooth. Then pour over the bottom layer and freeze for about an hour (to set).

For the top layer, place all ingredients into a high-speed blender and blend until smooth then pour over middle layer and freeze again for at least 3 hours.

Once everything has set, cut into squares and serve cold.

Store in freezer for up to one month.
