Pumpkin Chai Truffles

Just in time for all your get-togethers, these yummy truffles are the perfect bite or are great for a quick snack throughout the day. The secret ingredient is Raw Organic Protein in Vanilla Chai flavor to round out the fall flavor vibe. The ingredients and flavors combine perfectly into these little bites of goodness we’re sure you’re going to fall for.

 

Ingredients:

1 cup almond butter

½ cup pumpkin puree

¼ cup maple syrup

½ cup almond flour

½ cup coconut flour

⅓ cup Garden of Life Raw Organic Protein- Vanilla Chai

1 tsp. cinnamon

¼ tsp. salt

12 ounces organic dark chocolate

2 tsp. coconut oil

 

Preparation:

1. In a medium mixing bowl, combine the almond butter, pumpkin, and maple syrup. Mix until well combined. Add the flours, protein powder, cinnamon, and salt. Mix well. Using a small cookie scoop, scoop dough into 20 scoops and roll into balls. Freeze dough balls 20 to 30 minutes.

 

2. In a microwave safe bowl, combine the chocolate and coconut oil. Microwave 45 seconds and stir. Continue to microwave in 30 second increments until fully melted and smooth. 

 

3. Remove truffles from freezer and dip in the melted chocolate to coat. Place on a plate or piece of parchment to set. Once set, enjoy immediately or keep in the fridge until ready to serve.
