Quinoa Protein Bowl

Ingredients:

  • ½ cup quinoa, rinsed
  • 1 cup almond milk
  • 1 scoop of Collagen Peptides Powder, Unflavored
  • 1 tsp. maple syrup
  • ½ tsp. vanilla extract
  • Mixed berries, to serve
  • 1 Tbsp. chopped pistachios, to serve
  • 1 Tbsp. almond butter, to serve
  • 1 Tbsp. coconut flakes (optional)

 

Preparation:

  1. In a small pan, combine quinoa and almond milk. Bring to a gentle boil, then reduce heat and simmer for about 12-15 minutes, or until quinoa is soft and the liquid is absorbed.
  2. Remove from heat and stir in protein powder, maple syrup, and vanilla extract until well combined.
  3. Transfer to a bowl and top with mixed berries.
  4. Drizzle with almond butter and serve warm.
