Ingredients:
- ½ cup quinoa, rinsed
- 1 cup almond milk
- 1 scoop of Collagen Peptides Powder, Unflavored
- 1 tsp. maple syrup
- ½ tsp. vanilla extract
- Mixed berries, to serve
- 1 Tbsp. chopped pistachios, to serve
- 1 Tbsp. almond butter, to serve
- 1 Tbsp. coconut flakes (optional)
Preparation:
- In a small pan, combine quinoa and almond milk. Bring to a gentle boil, then reduce heat and simmer for about 12-15 minutes, or until quinoa is soft and the liquid is absorbed.
- Remove from heat and stir in protein powder, maple syrup, and vanilla extract until well combined.
- Transfer to a bowl and top with mixed berries.
- Drizzle with almond butter and serve warm.
