Sweet Potato Waffles

Mmm. . .waffles. Not just for breakfast, these delicious and healthy Sweet Potato Waffles from Chef Gwen have an added boost of protein nutrition.

Serves: 8

Ingredients

Use Organic if possible

Preparation

  1. Heat waffle iron to high. Blend all ingredients together to form a batter.

  2. Ladle about ¼ cup of batter into each waffle space and close waffle iron.

  3. Let waffles cook until the green light goes on (usually takes around 6-7 minutes).

  4. Serve with toppings of choice; butter, syrup, whipped cream, fresh fruit and/or chopped nuts.
