Vegan Queso

Who doesn't love a good Queso? Chef Gwen shares her Vegan Queso recipe that's the perfect any-time snack or addition to your next get-together.
Serves: 4-6
Ingredients
Use Organic if possible

1 cup cashews (soaked in water for 20 minutes then drained and rinsed)

½ cup orange bell pepper chopped
-
¼ cup olive oil
-
¼ cup nutritional yeast flakes
-
½ cup unsweetened almond milk
-
1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp paprika
-
½ tsp red miso paste
-
½ tsp sea salt
-
¼ tsp pepper
-
½ Tbsp lemon juice
-
½ Tbsp coconut aminos
Preparation
-
Place all ingredients into a blender or food processor and blend until smooth.

Option: Top with chopped tomatoes and/or jalapeños.
