Your holiday dessert doesn't have to be unhealthy! Try this Pumpkin Layered Parfait that has both Raw Organic Fit Vanilla Protein Powder and Coconut Oil to make this a yummy, healthy treat. 

Serves: 2-4 parfaits

Ingredients

For Pumpkin Layer:

For the Granola:

  • 6-8 Medjool dates, pitted

  • ¼ cup pumpkin seeds

  • ¼ cup Brazil nuts

  • ¼ cup walnuts

  • ½ tsp. cinnamon

  • ¼ tsp. salt

For the yogurt layer:

  • 2 cups Yogurt of your choice (if using plain, sweeten it with 8 drops of liquid stevia)

Preparation

  1. To make the pumpkin layer, place all pumpkin ingredients into a food processor using the “s” blade and blend until smooth. Refrigerate a few hours or overnight to let it thicken and set.

  2. To make the granola, place all granola ingredients into a food processor using the “s” blade and pulse until it is crumbly.

  3. Place about 1/3 cup of the pumpkin puree at the bottom of a glass cup, then add a few tablespoons of the granola on top, then 1/3 c. of yogurt. Then add a few tablespoons of the granola and then another ¼ cup of the pumpkin to fill the glass and top with more granola.

  4. Repeat above step to make more. Refrigerate for up to three days.
