Layered Pumpkin Parfait

Your holiday dessert doesn't have to be unhealthy! Try this Pumpkin Layered Parfait that has both Raw Organic Fit Vanilla Protein Powder and Coconut Oil to make this a yummy, healthy treat.
Serves: 2-4 parfaits
Ingredients
Use Organic is possible
For Pumpkin Layer:

1 can pumpkin
-
2 Tbsp. honey or maple syrup
-
2 Tbsp. Garden of Life Extra Virgin Coconut Oil, room temperature

1 scoop Garden of Life Raw Organic Fit Protein Powder, Vanilla
-
2 tsp. pumpkin pie spice
For the Granola:
-
6-8 Medjool dates, pitted
-
¼ cup pumpkin seeds
-
¼ cup Brazil nuts
-
¼ cup walnuts
-
½ tsp. cinnamon
-
¼ tsp. salt
For the yogurt layer:
-
2 cups Yogurt of your choice (if using plain, sweeten it with 8 drops of liquid stevia)
Preparation

To make the pumpkin layer, place all pumpkin ingredients into a food processor using the “s” blade and blend until smooth. Refrigerate a few hours or overnight to let it thicken and set.

To make the granola, place all granola ingredients into a food processor using the “s” blade and pulse until it is crumbly.

Place about 1/3 cup of the pumpkin puree at the bottom of a glass cup, then add a few tablespoons of the granola on top, then 1/3 c. of yogurt. Then add a few tablespoons of the granola and then another ¼ cup of the pumpkin to fill the glass and top with more granola.

Repeat above step to make more. Refrigerate for up to three days.
