Makes: 2-4 parfaits

Use Organic:

For Pumpkin Layer:

1 can pumpkin

2 Tbsp. honey or maple syrup

2 Tbsp. Garden of Life Extra Virgin Coconut Oil, room temperature

1 scoop Garden of Life MD Plant-Based Protein, Vanilla

2 tsp. pumpkin pie spice

For the Granola:

6-8 Medjool dates, pitted

¼ cup pumpkin seeds

¼ cup Brazil nuts

¼ cup walnuts

½ tsp. cinnamon

¼ tsp. salt

For the yogurt layer:

2 cups Yogurt of your choice (if using plain, sweeten it with 8 drops of liquid stevia)

Preparation:

To make the pumpkin layer, place all pumpkin ingredients into a food processor using the “s” blade and blend until smooth. Refrigerate a few hours or overnight to let it thicken and set. To make the granola, place all granola ingredients into a food processor using the “s” blade and pulse until it is crumbly. Place about 1/3 cup of the pumpkin puree at the bottom of a glass cup, then add a few tablespoons of the granola on top, then 1/3 c. of yogurt. Then add a few tablespoons of the granola and then another ¼ cup of the pumpkin to fill the glass and top with more granola. Repeat to make more. Refrigerate for up to three days.
