Whether you call them protein balls, energy bites, or bliss balls, combining nuts, oats, fruit, and protein into bite-sized snacks is one of our favorite healthy ways to satisfy a sweet tooth. This Vanilla Almond Cranberry Protein Balls recipe is made with both raw almonds and almond butter, Garden of Life plant-based Raw Organic Protein - Vanilla, and studded with dried cranberries. The flavor and texture is similar to cranberry oatmeal cookies, making them a perfect between-meal snack or dessert during the winter holiday season or any time you’d like a delicious bite.

Preparation

  1. Place dates in a small bowl and cover with hot water to soften. Let dates soak for 5 minutes, then drain. Reserve the soaking liquid. 

  2. In the bowl of a food processor with a multipurpose blade, combine the dates, almonds, almond butter, dried cranberries, oats, protein powder, honey, and vanilla extract. Process until all ingredients are finely chopped and the mixture is sticky and forming a ball. If the mixture is too dry, add 1 tablespoon of the water you saved from soaking the dates and process again. 

  3. Use clean, damp hands to roll the mixture into 1-inch balls. Place balls on a baking sheet or tray and refrigerate until firm, about 30 minutes. Serve or transfer balls to an airtight storage container and store in the refrigerator.
