Trilogy Bars

Bottom Layer:
- 2 cups walnuts
- 1/3 cup coconut palm sugar
- 2½ tbsp. peanut butter
- 1 tbsp. water
- dash of sea salt
- 1½ tbsp. Garden of Life Coconut Oil
- 2 tbsp. Garden of Life Golden Flaxseed & Organic Chia Seed
Middle Layer:
- 3 bananas
Top Layer:
- ¾ cup peanut butter
- ½ cup Garden of Life Coconut Oil
- 1/3 cup maple syrup or honey
- 1/3 cup cacao powder
Directions:
- For the bottom layer (crust), place walnuts and coconut palm sugar in the food processor using the S blade. Process about 10 seconds so that the walnuts are finely chopped.
- Add remaining ingredients, except for the water and process again for another 15-to-20 seconds. Add water, process for 10 seconds and the crust mixture will begin to stick.
- Press crust into a brownie pan.
- For the middle layer, slice the 3 bananas and arrange in a single layer on top of the crust.
- To make the top layer, place all top layer ingredients (peanut butter, coconut oil, maple syrup or honey, and cacao or cocoa powder) into the food processor using the S blade and process until smooth. Pour mixture on top of bananas, spread evenly and then top it all off with 1/4 cup chopped peanuts.
- Refrigerate several hours before serving. (Lasts one week in refrigerator or one month in freezer.)
